SAURE ZIPFEL MINI BRATWURST
Saure Zipfel is a traditional German dish made with small sausages cooked in a vinegar-based marinade.

Ingredients
- 10-12 small sausages (such as Nürnberger Rostbratwurst or Frankfurters)
- 1 onion, thinly sliced
- 1 carrot, thinly sliced
- 1 bay leaf
- 5-6 whole peppercorns
- 2 cloves
- 1 teaspoon mustard seeds
- 1 cup white wine vinegar
- 1 cup water
- 1 tablespoon sugar
- Salt to taste
- Fresh parsley, chopped (for garnish)
- Bread or rolls, for serving
Step 1
In a large pot, combine the white wine vinegar, water, sugar, bay leaf, peppercorns, cloves, and mustard seeds. Bring the mixture to a simmer.
Step 2
Add the sliced onions and carrots to the pot. Let them simmer in the marinade for about 5-7 minutes until they start to soften.
Step 3
Add the small sausages to the pot. Allow them to simmer in the marinade for another 10-15 minutes. The sausages should absorb the flavours of the marinade.

Taste the marinade and adjust the seasoning with salt if needed. The marinade should have a balance of tanginess and sweetness.
Step 5
Once the sausages are heated through and have absorbed some of the marinade’s flavors, remove the pot from heat.
Step 6
Serve the Saure Zipfel hot, garnished with chopped fresh parsley. The sausages can be served in the marinade or removed and plated separately.
