TWO CHEESE CHICKEN
BROCCOLI PASTA

A simple pasta dish but loaded with flavor! This Chicken Broccoli Pasta is easy to make and perfect for a family style dinner, cooked in a white wine sauce and tossed with mozzarella and Parmesan cheese.

Ingredients

  • 1/4 cup olive oil
  • 6 cloves garlic minced
  • 4 ounce six- boneless skinless chicken breasts, cubed
  • salt and pepper to taste
  • 4 cups broccoli cut into bitesized florets
  • 1 cup dry white wine
  • 1 1/2 cups low sodium chicken broth
  • 6 ounces shredded mozzarella cheese
  • grated Parmesan cheese
  • 1 pound ziti pasta or short cut pasta of choice

Step 1

Heat the olive oil in a large pan. Add the garlic and cook for about 3-4 minutes.

Step 2

Place the diced chicken into the pan and season with salt and pepper. Simmer for about 5 minutes.

Step 3

Add the white wine and simmer until reduced by half.

Step 4

Add the stock and simmer for a further 5-10 minutes. Taste the sauce and adjust the seasoning if desired. Bring a pot of water to a boil. Add your pasta and cook following the instructions given on the package.

Step 5

Just before the pasta is done, add the broccoli florets to the pasta and cook for another two minutes. Drain the pasta and broccoli, add to the chicken.

Step 6

Toss gently and add the mozzarella. 

Step 7

Mix through and transfer to a large platter. Garnish with freshly grated Parmesan cheese.
